Is there any interest in creating established pre-built onion services designed around data sovereignty?
V3 services are highly aligned with securely self hosting to the point where in my mind its the best way to do it.
I am more of a hobbiest and not an expert in this field the architecture and software design. This should be viewed as a proof of concept what can be achieved these days.

Websockets over Tor proves to be surprisingly useable for real-time collaboration and I don’t understand why there are not more services like this for people just completely own the stack.
I do not know enough to take the idea to the next level, perhaps a standalone binary with Arti built in would be ideal. Who is interested in this sort of thing?
Another thing spinning in my head is providing an optional way for users of the suite to support the network by utilizing their always on node as a snowflake or middle relay to make it more self sufficient.
